Quesadilla de Flor de Calabaza: Squash Blossom Quesadilla
Ingredients
2 - 8 inch flour tortilla
1 cup grated queso oaxaca, divided
5 fresh squash blossoms
1 tablespoon canola oil
Cooking Instructions
Top one flour tortilla with 1/2 cup grated queso oaxaca. Trim squash blossoms and remove and discard their stamen. Arrange squash blossoms over cheese, overlapping them slightly. Top with another 1/2 cup cheese and another tortilla.
Heat 1 tablespoon oil in a medium skillet over medium high heat. Cook quesadilla, flipping once until cheese is melted and quesadilla is golden brown on both sides. (about 4 - 5 minutes) Transfer to a plate, cut into quarter and serve immediately.
